Ingredients 1 white onion, finely sliced 2 tsp olive oil 3 garlic cloves, sliced 2 carrots, scrubbed and diced 85g red lentils 1 vegetable stock cube, crumbled generous sprigs parsley, chopped (about 2 tbsp) plus a few extra leaves Method Put the kettle on to boil while you finely slice the onion. Heat the oil in a medium pan, add the onion and fry for 2 mins while you slice the garlic and dice the carrots. Add them to the pan, and cook briefly over the heat. Pour in 1 litre of the boiling water from the kettle, stir in the lentils and stock cube, then cover the pan and cook over a medium heat for 15 mins until the lentils are tender. Ingredients 6 tbsp porridge oats 2 oranges just under ½ x 200ml tub 0% fat Greek-style yogurt 60g pot raisins, nuts, goji berries and seeds Method Put the oats in a non-stick pan with 400ml water and cook over the heat, stirring occasionally for about 4 mins until thickened. Meanwhile, cut the peel and pith from the oranges then slice them in half, cutting down either side, as closely as you can, to where the stalk would be as this will remove quite a tough section of the membrane. Ingredients 2 seeded wraps a little olive oil, for brushing 1 roasted red pepper, from a jar 2 tomatoes 2 tbsp tomato purée 1 tbsp chopped dill 2 tbsp chopped parsley 2 eggs 65g pack rocket ½ red onion, very thinly sliced     Method Heat oven to 200C/180C fan/gas 6. Lay the tortillas on two baking sheets, brush sparingly with the oil then bake for 3 mins. Meanwhile chop the pepper and tomatoes and mix with the tomato purée, seasoning and herbs. Turn the tortillas over and spread with the tomato mixture, leaving the centre free from any large pieces of pepper or tomato. Break an egg into the centre then return to the oven for 10 mins or until the egg is just set and the tortilla is crispy round the edges. Serve scattered with the rocket and onion. Ingredients   6 tbsp porridge oats just under ½ x 200ml tub 0% fat Greek-style yogurt ½ x 350g pack frozen blueberries 1 tsp honey (optional) Method Put the oats in a non-stick pan with 400ml water and cook over the heat, stirring occasionally for about 2 minutes until thickened. Remove from the heat and add a third of the yogurt. Meanwhile, tip the blueberries into a pan with 1 tbsp water and the honey if using and gently poach until the blueberries have thawed and they are tender, but still holding their shape. Ingredients 2 spring onions, ends trimmed off 4 tablespoons of frozen peas, defrosted 1 courgette, halved with the ends cut off 2 slices of ham 100g feta cheese 4 eggs   Method Ask a grown-up helper to switch the oven on to 180C/ 160C fan/gas 4. Snip or cut up the spring onions and put them in a bowl. Add the peas to the bowl. Grate the courgette using your rotary grater, one half at a time, then add it to the bowl. Cut the ham into pieces with your scissors, if you do this over the bowl it will fall straight in. Break the feta into the bowl by crumbling it with your hands. Crack the eggs into a bowl and, if any bits of shell fall in, scoop them out with a spoon. Whisk the eggs until the yolks are mixed into the white. Pour the eggs into the other bowl and stir. Ingredients     1 small apple     1 tsp honey     1/2 tsp ginger     1 tblsp natural yoghurt     1 handful of oats (optional)     1 maryland chocolate chip cookie (optional)     Serves 1 Method Peal, core and slice 1 small apple. Put it in a microwavable bowl with the honey and ginger and microwave for 1 minute. Mash up the ingredients. (if in hot weather you may wish to leave it to cool in the fridge for a while before going onto the next step). If using oats mix them with the yoghurt before adding to the mixture. (i like to do this as i feel it makes the texture more interesting, but its up to you). Crush a Maryland cookie on top of the mixture. Enjoy :)

Ingredients     Salt     1 pound bow-tie pasta     2 garlic cloves, smashed     2 tablespoons extra-virgin olive oil     3 ears fresh corn, kernels cut off     1 pint cherry tomatoes     1/4 cup fresh basil leaves, torn into pieces     2 tablespoons unsalted butter     Directions     Bring a large pot of salted water to a boil and cook the pasta until al dente; drain.     Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the garlic and tomatoes and cook, stirring occasionally, until the tomatoes are softened, about 5 minutes. Stir in the corn, raise the heat slightly and cook until the corn is heated through and golden, about 5 minutes. Season to taste with salt.     Add the vegetables, butter and basil to the pasta and toss.

Ingredients     1 loaf of french bread     1 1/2 cups mozzarella cheese, shredded     1/2 cup bbq sauce     1/4 cup red onion, chopped        1 cup chicken, cooked and shredded     1-2 TBS cilantro, chopped Directions     Preheat your oven to 450 degrees.     Cut your french bread loaf in half (hot dog style).     Spread bbq sauce evenly over the top of each french bread loaf.     Sprinkle about 1/3 of the mozzarella over the top of each loaf.     Spread chicken, red onion and cilantro evenly over both loaves.     Top with remaining cheese.     Bake in oven for about 10 minutes or until cheese is melted and starts to turn golden.

Ingredients 1-1/3 cups Almond Milk Maple Syrup 2 tablespoons Coconut Oil 2 cups Bisquick Healthy Heart mix 1-2 ripe Bananas Instructions Let the almond milk rest on the counter for 10 to 15 minutes before combining with Bisquick. Mix in the coconut oil and mashed banana. Use one to two bananas depending on their size and how much natural banana flavor you would like them to have. Grease the waffle iron with coconut oil and turn to medium. Cook until the indicator tells you they should be done. Enjoy right away topped with fresh slices of banana, coconut oil, pure maple syrup or cinnamon. Or save for later-they are great cold! if your bananas aren’t quite ripe enough you can peel them and put them in the microwave for a few seconds. That will simulate the aging process and give you great banana flavor. Top with Maple Syrup.

Then, place the ice on top. Next, pour the cups of milk over the top and blend for 30 seconds. Turn off machine, and stir with fork to move ice around. Now, blend again until smooth. If the ice is still not breaking apart, try adding a little bit more milk to get things moving around. If you prefer a smoothie taste, add a 1/2 cup yogurt to the mix!
